Christy Morgan is a graduate of the Culinary School I’m going to in a month (a month OMG!!! That’s so close!!!!) She was even at the open house last weekend and is a very inspiring person!! Her book is awesome!!!!
It’s official!!!
I’m starting culinary school in July!! I’m so excited!!! I’ll be going to The Natural Epicurean Academy of Culinary Art and will train in the following disciplines:
- Macrobiotic
- Vegetarian
- Vegan
- Ayurvedic
- Raw & Living Foods
This is what I have had up my sleeve and what has kept me so busy lately. Lots of soul searching and trying to decide if this was the right direction. It’s too much $$ to go just for funsies! I went to the open house last weekend and it was wonderful and I was ready to apply right then and there but had to discuss it with Chris first.
July will be here before I know it!!!!
At the open house they discussed career options after graduation and the idea of working with medical professionals to help people who have special diets sounded really fun. I’m going to keep an open mind though because I’m not even sure what all my options are at this moment!!!

Dinner was a bunch of leftovers mixed together. Spiced chickpeas, garlic couscous and roasted vegetables.

Pleasantly of the day - found out the manager at the Starbucks I go to is 3 weeks vegan!! Yeah!!!!
Chris wanted to check out the new Whole Foods at Bee Cave and I picked up some stuff for dinner. Sesame tofu, beet & pecan salad and a couscous apple salad. I added the peas. Delicious !
