Vegan MoFo - Monday Munchies - 






Queso Battered Kale Chips Blend together 2 cups cashews soaked (4-6 hrs)1/3 cup nutritional yeast1/3 cup lemon juice1 hatch chili seeded (or pepper of your choice)1 red bell pepper1 handful of cilantro w/ stems2 cloves garlic2 TBS chickpea miso1 ts salt (or to taste)1/2 ts chipotle chili powder or to taste Water for blending 2-3 bunches of kale washed, stemmed, torn and spun Massage mixture lightly into kale an then dehydrate until crispy.

BV (before vegan) hubby used to love polish sausage on a bun with bell peppers, onion and garlic cooked in olive oil. This is a vegan version using Field Roast. With a side of broccoli cole slaw.
