I love new toys!!!! Got a bamboo steamer this weekend so I could make dumplings!!! They weren’t as cute as the ones I made in class but they were yummy!
Last Thursday We had 3 guest speakers - Jam from Thai Fresh, Romy Suskin http://www.romysuskin.com/ and Arttemis fromNew Earth Center. They talked to us about starting a business and branding yourself. It was very interesting and Arttemis sells some pretty tasty superfood treats!

Today was crepes, pancakes and waffles. Our group made vegan/gluten free crepes and we learned about presentation crepes. In this one Chef Marco used marigold petals and American Saffron - which is not saffron at all - don’t even bother.

Learned quiches yesterday - had the vegan version. I hated eggs before going vegan so this is not a fave.
I could practice making potato leek soup - one of my exam dishes - or make vegan gluten free chocolate chip cookies. Yeah I went with the cookies!!!
Millet balls with curry carrot coulis. Another Chef Marco entree - recipe rewrite dish.
Chard wrapped tofu with carrot salad. Chef Marco made this in our entrees demo. We were given very vague and incomplete recipes and had to take notes while he was cooking and then rewrite the recipe, trying to get it publish ready. Very interesting assignment!
In the demo today we learned how to make fresh pasta. I want to make fresh pasta every day!
Lab today was omelettes and frittatas. We had to make a side dish to go with them so I made a spicy potato hash. I wanted to be able to eat too!
