Vegan Experience

It started as a 30 day vegan experiment for a work project ... that was 5 years ago. The experiment became an experience.
Recent grad of The Natural Epicurean Culinary School - where I was trained in Vegetarian, Vegan, Macrobiotic, Raw Living Foods and Ayurvedic cooking.
Currently the Raw Vegan Chef at Austin Skinny Limits.
Back on Weight Watchers trying to loose the weight I gained eating crazy amounts of food at culinary school.
Taco Salad from yesterday (13 pts total)
Lettuce, Spinach, Bell peppers, Cilantro, green onion, grape tomatoes (all 0 pts)
9 1/2 oz Pinto beans (5 pts)
1/4 cup cheddar daiya (2 pts)
1/2 cup salsa (0 pts)
1 pack of Wholly Guac 100 calorie pack (2 pts) (I mix the salsa and guac in like a dressing)
Roasted Jalapeno Tortilla ( 4 pts) (I toasted it and broke it into small pieces for some spicy crunch)
